Simeon acts almost exclusively for claimants in clinical negligence and product liability cases. As of 2008 he is involved in over 100 maximum severity clinical negligence claims, a major product liability group action and a product liability action in the House of Lords and European Court of Justice. He also acts for claimants and defendants in catastrophic brain injury personal injury actions and for defendants in solicitors negligence actions, normally arising out of a medical context. He is currently acting for major security firms defending actions arising out of injuries sustained in Iraq, Afghanistan and other world-wide trouble spots. The remainder of his workload is an eclectic mix of disciplinary actions and public law family cases with a medical context where advocacy and trial experience are required.

He is listed as a leading silk in Chambers and Partners (2008) in clinical negligence, personal injury and product liability and is considered to be "head and shoulders above the rest" and "an absolutely superb advocate". He is ranked as a leading silk in clinical negligence by the Legal 500, where he is said to be "authoritive and incisive".

He lectures and writes frequently on medico-legal topics.
